Quick and delicious vegan burrito wraps packed with beans, rice, and fresh veggies, perfect for a fast meal.

Ingredients

Tortillas

  • 4 pieces large whole grain tortillas
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup cooked brown rice
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado avocado (sliced)
  • 1 cup salsa
  • 1 cup fresh spinach or lettuce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper

Instructions 

  • Mix black beans, rice, corn, cumin, chili powder, salt, and pepper in a bowl.
  • Lay out tortillas and evenly distribute the mixture.
  • Add avocado slices, salsa, and greens on top.
  • Fold sides and roll up tightly.
  • Serve immediately or wrap for on-the-go.
