Ingredients

Tortillas

  • 4 pieces whole wheat tortillas
  • 1 can black beans, rinsed and drained
  • 1 cup cooked quinoa
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes
  • 1 piece avocado, sliced
  • 1 cup shredded lettuce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • optional fresh cilantro for garnish
  • optional lime wedges for serving

Instructions 

  • Mix black beans, quinoa, corn, tomatoes, cumin, chili powder, salt, and pepper.
  • Place tortillas on a surface and distribute filling evenly.
  • Add sliced avocado and lettuce, then roll up tightly.
  • Repeat with remaining tortillas and filling.
  • Serve immediately with cilantro and lime wedges if desired.
