A simple and healthy cookie recipe made with just three ingredients: bananas, oats, and cocoa powder.

Instructions 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the rolled oats and unsweetened cocoa powder to the mashed bananas, and mix until fully combined.
  • Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the cookies are set and slightly firm to the touch.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for a few days.
