A nutritious and protein-packed casserole combining tender chicken, broccoli, and cheesy goodness for a quick, healthy dinner.

Ingredients

Protein

  • 2 cups cooked chicken breast, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup brown rice, cooked
  • 1 cup low-fat greek yogurt
  • 1 cup shredded low-fat cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup low-sodium chicken broth
  • 1/2 teaspoon paprika (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix chicken, broccoli, rice, yogurt, half the cheese, garlic, onion, salt, and pepper.
  • Stir in chicken broth and transfer to a greased baking dish.
  • Top with remaining cheese, sprinkle paprika, and drizzle olive oil.
  • Bake for 25-30 minutes until bubbly and golden. Let cool briefly before serving.

Notes

For extra flavor, add herbs like parsley or thyme before baking.
