Ingredients

  • 2 large cucumbers (thinly sliced)
  • 1 bell pepper (any color, diced)
  • 1 small red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice

Instructions 

  • In a large mixing bowl, combine the sliced cucumbers, diced bell pepper, and sliced red onion.
  • Add the halved cherry tomatoes and chopped parsley to the bowl.
  • In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, black pepper, garlic powder, and lemon juice until well combined.
