This apple layer cake is a moist, healthy, and quick-to-make dessert perfect for any occasion.

Ingredients

Dry ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Wet ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Main ingredients

  • 2 cups grated apples (about 2 medium apples)
  • 1/2 cup chopped walnuts (optional) (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch pans.
  • Mix dry ingredients in a bowl. Combine wet ingredients in another.
  • Combine wet and dry, then fold in apples and walnuts.
  • Divide batter into pans and bake for 25-30 minutes.
  • Cool, then layer or serve plain.

Notes

Using whole wheat flour adds fiber and nutrients to this delicious cake.
