Autumn Soup - Sausage Tortellini Soup with Spinach

A hearty and flavorful soup combining sausage, tortellini, and fresh spinach, perfect for cozy autumn days.

Ingredients

Meat

  • 1 pound italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (9 oz) refrigerated tortellini (cheese or spinach-filled)
  • 2 cups fresh spinach, chopped
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Cook sausage until browned, remove and set aside.
  • Cook onion until translucent, add garlic, then pour in broth and tomatoes. Bring to boil.
  • Return sausage, add tortellini, cook until tender, then stir in spinach until wilted. Season with salt and pepper.

Notes

This soup is best served hot, garnished with extra spinach or cheese if desired.
