Instructions
In a large bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
Pour the dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocados.
Taste and adjust seasoning if needed.
Garnish with fresh cilantro or parsley if desired before serving.
