Ingredients

  • 2 ripe avocados (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1/4 red onion (finely chopped)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • fresh cilantro or parsley (for garnish (optional))

Instructions 

  • In a large bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocados.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh cilantro or parsley if desired before serving.

Notes

For added flavor, consider adding diced jalapeños or a sprinkle of feta cheese.
