A hearty and flavorful baked dish combining ground beef, eggplant, and cheese, perfect for a comforting meal.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • 2 medium eggplants, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • to taste to taste Salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté onions and garlic in olive oil until translucent (~5 min).
  • Cook ground beef until browned (~8 min), then drain excess fat.
  • Layer eggplant, beef, and tomatoes in a baking dish; sprinkle with Italian seasoning.
  • Top with mozzarella and Parmesan cheeses, cover with foil, and bake 30 min. Uncover and bake 10 min until bubbly.

Notes

For a richer flavor, let the dish rest for 5 minutes before serving.
