Ingredients

eggplants, sliced

onion, chopped

garlic, minced

diced tomatoes in juice

shredded mozzarella cheese

Instructions
Preheat oven to 375°F (190°C).
Sauté onions and garlic in olive oil until translucent (~5 min).
Cook ground beef until browned (~8 min), then drain excess fat.
Layer eggplant, beef, and tomatoes in a baking dish; sprinkle with Italian seasoning.
Top with mozzarella and Parmesan cheeses, cover with foil, and bake 30 min. Uncover and bake 10 min until bubbly.
Notes
For a richer flavor, let the dish rest for 5 minutes before serving.
