  • 4 pieces Japanese sweet potatoes (satsumaimo) (about 10 oz (300 g) each)

Instructions 

  • Preheat oven to 325ºF (163ºC). Wash and dry the sweet potatoes thoroughly.
  • Poke holes in each sweet potato with a fork. Wrap two in foil and leave two unwrapped.
  • Place on a baking sheet and bake for 90 minutes, until tender.
  • Remove from oven, unwrap foil if used, and let stand for a few minutes before serving.

Notes

Experiment with leaving the sweet potatoes wrapped or unwrapped to see which texture you prefer.
