Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • to taste salt salt
  • to taste pepper pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Wash, dry, and prick sweet potatoes with a fork.
  • Rub with olive oil, sprinkle with salt and pepper.
  • Place on a baking sheet and bake for 45-60 minutes until tender.
  • Let cool slightly before serving.

Notes

Pricking the sweet potatoes helps steam escape during baking.
