Ingredients

Meat

  • 2 lbs boneless, skinless chicken breasts, cut into 1.5-inch cubes

Vegetables

  • 2 large bell peppers (red and yellow), cut into 1-inch squares
  • 1 large red onion, cut into 1-inch pieces
  • 1 medium zucchini, sliced into thick rounds
  • 12 pieces cherry tomatoes

Skewers

  • 12 pieces wooden or metal skewers

Marinade

  • 0.25 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon red pepper flakes (optional)

Instructions 

  • Whisk together marinade ingredients in a large bowl.
  • Cube chicken, coat with marinade, and refrigerate for at least 2 hours.
  • Prepare vegetables by cutting and washing.
  • Thread chicken and vegetables onto skewers, then grill for 12-15 minutes, turning occasionally.
  • Check that chicken reaches 165°F, then rest for 2-3 minutes before serving.

Notes

Soak wooden skewers in water for 30 minutes to prevent burning.
