A creamy, cheesy broccoli casserole topped with crunchy Ritz crackers, perfect for a comforting family dinner.

Ingredients

Vegetables

  • 12 oz frozen broccoli florets
  • 1 small yellow onion (diced)
  • 5 cloves garlic (minced)
  • 8 oz mushrooms (diced into small pieces)
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil (or butter)
  • 2/3 cup sour cream
  • 10.5 oz cream of mushroom soup
  • 2 cups sharp cheddar cheese (freshly grated)
  • 1 sleeve ritz crackers (crushed)

Instructions 

  • Sauté mushrooms, garlic, onion, olive oil, and salt in a skillet for 10 minutes.
  • Mix 1 cup of cheddar, mushroom soup, sour cream, broccoli, and mushroom mixture in a bowl.
  • Pour into greased casserole, top with remaining cheddar, and sprinkle crushed crackers.
  • Bake at 350°F (175°C) for 25-35 minutes until golden and bubbly.

Notes

For extra flavor, add a dash of pepper or paprika before baking.
