A delicious and healthy baked dish combining fresh vegetables with creamy cheese for a satisfying meal.

Ingredients

Vegetables

  • 2 cups fresh broccoli
  • 2 cups tender cauliflower florets

Dairy

  • 1 cup creamy cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup whole milk
  • 1/4 cup grated Parmesan cheese

Eggs

  • 2 large eggs

Spices & Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Steam or blanch broccoli and cauliflower until tender, then drain.
  • In a bowl, whisk eggs, cottage cheese, milk, garlic powder, onion powder, salt, and pepper.
  • Combine vegetables with the cheese mixture and transfer to a baking dish. Top with shredded cheddar and Parmesan.
  • Bake for 25-30 minutes until golden and bubbly. Serve warm.

Notes

You can add a pinch of paprika or herbs for extra flavor.
