A quick and nutritious vegetarian pasta dish featuring broccoli and chickpeas, perfect for a healthy weeknight dinner.

Ingredients

Pasta

  • 8 oz pasta of choice (whole wheat or gluten-free)
  • 2 cups broccoli florets
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • to taste salt and pepper
  • 1/4 cup grated parmesan cheese (optional)
  • to taste fresh lemon juice (from 1 lemon)
  • for garnish fresh parsley, chopped

Instructions 

  • Cook pasta until al dente, reserve 1 cup of water, then drain.
  • Heat olive oil, sauté garlic and red pepper flakes for 1 minute.
  • Add broccoli and cook 3-4 minutes until bright green and tender.
  • Mix in chickpeas and pasta, add reserved water to desired consistency.
  • Season with salt, pepper, lemon juice, add Parmesan if using, garnish with parsley, and serve.

Notes

Feel free to add more lemon or Parmesan for extra flavor.
