A quick and nutritious vegetarian pasta dish featuring broccoli and chickpeas, perfect for a healthy weeknight dinner.
Ingredients
Pasta

oz
pasta of choice (whole wheat or gluten-free)
2
cups
broccoli florets
1
can (15 oz)
chickpeas, drained and rinsed
2
tablespoons
olive oil
3
cloves
garlic, minced
1/2
teaspoon
red pepper flakes (optional)
to taste
salt and pepper
1/4
cup
grated parmesan cheese (optional)
to taste
fresh lemon juice (from 1 lemon)
for garnish
fresh parsley, chopped
Instructions
Cook pasta until al dente, reserve 1 cup of water, then drain.
Heat olive oil, sauté garlic and red pepper flakes for 1 minute.
Add broccoli and cook 3-4 minutes until bright green and tender.
Mix in chickpeas and pasta, add reserved water to desired consistency.
Season with salt, pepper, lemon juice, add Parmesan if using, garnish with parsley, and serve.
Notes
Feel free to add more lemon or Parmesan for extra flavor.
