A flavorful and easy-to-make bowl combining spicy buffalo chicken with fresh vegetables and rice for a satisfying meal.

Ingredients

Base

  • 2 cups cooked rice (white or brown)

Protein

  • 2 cups shredded cooked chicken

Sauce

  • 1/2 cup buffalo sauce

Vegetables & Beans

  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed and drained)
  • 1 cup diced tomatoes

Cheese & Garnish

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Dressing & Seasoning

  • 1/4 cup ranch dressing (optional)
  • to taste salt and pepper

Instructions 

  • Mix shredded chicken with buffalo sauce until well coated.
  • Layer cooked rice in bowls as the base.
  • Top rice with buffalo chicken mixture, then add corn, black beans, and tomatoes.
  • Sprinkle with cheddar cheese and green onions.
  • Drizzle ranch dressing if desired, season with salt and pepper, then serve.

Notes

Adjust spice level with more or less buffalo sauce.
