Ingredients

Dried Ingredients

  • 1 cup plain flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon dried parsley
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1 cup shredded cheddar
  • 4 large eggs (lightly beaten)
  • 1/2 cup melted butter or cooking oil
  • 3 cups freshly grated zucchini
  • 1/4 to 1/2 cup diced onion
  • 1 cup crushed Ritz crackers
  • 2.5 tablespoons melted butter

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients and combine with zucchini, onion, eggs, and melted butter. Pour into a greased baking dish.
  • Top with shredded cheddar and crushed Ritz crackers, then drizzle with melted butter.
  • Bake for 45 minutes until golden and set. Serve warm.

Notes

For extra flavor, add a pinch of cayenne pepper or herbs.
