A simple and flavorful plant-based pasta dish featuring sweet caramelized onions and a savory balsamic glaze.

Ingredients

Pasta

  • 250 g pasta (spaghetti or fettuccine)

Onions

  • 2 large large onions, thinly sliced

Olive oil

  • 3 tablespoons olive oil

Garlic

  • 2 cloves garlic, minced

Balsamic vinegar

  • 1 teaspoon balsamic vinegar

Salt and pepper

Fresh parsley

  • for garnish fresh parsley, chopped

Nutritional yeast or vegan parmesan

  • optional nutritional yeast or vegan parmesan

Instructions 

  • Cook pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a skillet over medium heat. Add sliced onions and cook until golden brown, about 15-20 minutes.
  • Add minced garlic and cook for 1-2 minutes. Stir in balsamic vinegar, salt, and pepper.
  • Combine cooked pasta with caramelized onions and toss well. Garnish with parsley and optional nutritional yeast.

Notes

For extra flavor, sprinkle with additional herbs or vegan cheese.
