Ingredients

Sweet Potatoes

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • to taste salt
  • to taste pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Wash, peel, and halve the sweet potatoes lengthwise.
  • Mix olive oil, brown sugar, cinnamon, salt, and pepper. Toss sweet potato halves in the mixture.
  • Arrange cut-side down on a parchment-lined baking sheet.
  • Bake for 25-30 minutes until tender and caramelized. Cool slightly before serving.

Notes

For extra flavor, sprinkle with a little sea salt before serving.
