A creamy, cheesy casserole combining tender cauliflower, broccoli, and shredded chicken for a comforting meal.

Ingredients

Vegetables

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • ½ cup cream cheese (softened)
  • 2 tbsp mayonnaise
  • ½ tsp garlic powder
  • ¼ tsp sea salt
  • ¼ tsp freshly ground pepper
  • ¾ cup grated cheese (¼ cup in the sauce and ½ cup for topping)
  • 2 cups cooked and shredded chicken

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9x9 dish and set aside.
  • Boil water, cook cauliflower and broccoli for 2-3 minutes until fork-tender, then drain.
  • Mix softened cream cheese, mayo, seasonings, ¼ cup cheese, and shredded chicken in a bowl. Add steamed vegetables and combine.
  • Transfer mixture to prepared dish, top with remaining cheese, and bake for 20 minutes. Broil for 2-3 minutes until bubbly and browned.
  • Serve warm.

Notes

For extra flavor, add herbs or spices as desired.
