  • 5 cups chopped cauliflower florets
  • 4 ounces cream cheese
  • 1.5 cups whole milk
  • 1 teaspoon Frank’s RedHot sauce
  • 1 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon Worcestershire sauce
  • 0.5 teaspoon Dijon mustard
  • 0.25 teaspoon black pepper
  • 8 ounces Mac and Cheese Shredded Cheese Blend
  • 20 Ritz crackers Ritz crackers
  • 1 teaspoon minced fresh thyme
  • 0.25 cups coarsely ground black pepper
  • 2 tablespoons unsalted butter (melted)

Instructions 

  • Preheat oven to 400°F. Spray a 1.5-quart casserole dish with olive oil spray.
  • Cook cauliflower in boiling water for 3 minutes, then drain.
  • Make cheese sauce by whisking cream cheese, milk, hot sauce, spices, Worcestershire, and mustard; add shredded cheese until smooth.
  • Crush Ritz crackers, mix with thyme, black pepper, and melted butter.
  • Combine cauliflower with cheese sauce, pour into dish, top with cracker mixture, and bake until bubbling and golden, about 15 minutes.

Notes

For extra flavor, add a sprinkle of Parmesan cheese on top before baking.
