A quick and cheesy breakfast quesadilla filled with scrambled eggs and melted cheddar cheese, perfect for a satisfying start to your day.

Ingredients

Eggs

  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 2 pieces flour tortillas
  • 1 tablespoon butter
  • to taste salt and pepper (for seasoning)
  • optional chopped green onions or salsa (for serving)

Instructions 

  • Whisk eggs with salt and pepper.
  • Melt butter in a skillet and scramble eggs until just set.
  • Place a tortilla in the skillet, sprinkle half of cheese on one half, add eggs, then top with remaining cheese.
  • Fold the tortilla, cook 2-3 minutes per side until golden and cheese melts.
  • Cut into wedges and serve with optional toppings.
