A creamy, cheesy casserole combining broccoli and cauliflower, topped with buttery Ritz crackers for a comforting meal.

Ingredients

Vegetables

  • 1/2 head broccoli (large sized)
  • 1/2 head cauliflower (large sized)
  • 1/2 can cream of mushroom soup
  • 1/2 cup mayonnaise (light is fine)
  • 2 cups shredded sharp cheddar cheese
  • 1 egg egg
  • 1 sleeve Ritz crackers
  • 2 Tbsp butter
  • to taste salt salt
  • to taste pepper pepper

Instructions 

  • Boil chopped broccoli and cauliflower until tender, then drain.
  • Mix egg, cream of mushroom soup, mayonnaise, cheese, salt, and pepper.
  • Combine cooked vegetables with the mixture and pour into a greased casserole dish.
  • Crush Ritz crackers, drizzle with melted butter, and sprinkle on top.
  • Bake at 350ºF for 30-35 minutes until bubbly and golden.

Notes

For a crunchier topping, broil for an additional 2 minutes.
