A creamy, cheesy cauliflower casserole perfect for a keto-friendly meal that’s easy to prepare and full of flavor.

Ingredients

Vegetables

  • 1 head cauliflower (sliced thinly)
  • 2 cups Swiss Gruyere cheese (shredded)
  • 4 green onions green onions (sliced)
  • 1.5 cups heavy cream
  • to taste salt and black pepper

Instructions 

  • Preheat oven to 375°F (190°C) and prepare baking dish.
  • Slice cauliflower into 1/4 inch thick rounds.
  • Layer half of cauliflower in dish, sprinkle with half of cheese, green onions, salt, and pepper. Repeat with remaining cauliflower and cheese.
  • Pour heavy cream over casserole, cover with foil, and bake for 30 minutes.
  • Remove foil and bake uncovered for 40 minutes until golden and bubbly. Rest 5 minutes before serving.

Notes

This dish is best served warm and can be stored in an airtight container for leftovers.
