50gramsbutter
1mediumbrown onion(finely diced)
4clovesgarlic(peeled and minced)
0.25cupbuckwheat flour
1.5cupssoy milk(or milk of choice)
1.5cupschicken stock
1tablespoonwholegrain mustard
1tablespoonDijon mustard
1teaspoonsea salt flakes
0.25teaspoondried thyme

500gramscooked chicken(shredded)
1headbroccoli(roughly chopped; stem diced)
60gramsbaby spinach
1cupmozzarella(grated)
1cupcheddar cheese(grated)
Instructions
Preheat oven to 180°C/356°F. Cook pasta until al dente, then drain.
Melt butter, sauté onions and garlic. Add flour, whisk in milk and stock to make a creamy sauce. Stir in mustards, thyme, salt, pepper, and wilt spinach.
Combine cooked pasta, shredded chicken, and broccoli with the sauce. Top with grated cheeses and bake for 15 minutes until golden.
