Ingredients

Bread

  • 2 slices bread (your choice)
  • 1 cup shredded cooked chicken
  • 1 ripe avocado ripe avocado, mashed
  • 0.5 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon mayonnaise
  • to taste salt and pepper
  • for grilling butter
  • optional lettuce or tomato slices

Instructions 

  • Mix shredded chicken, mashed avocado, mayonnaise, salt, and pepper.
  • Spread mixture on one bread slice.
  • Add cheese and optional lettuce or tomato, then top with second bread slice.
  • Grill the sandwich in a buttered skillet until golden brown, about 3-4 minutes per side.
  • Remove, slice, and serve warm.

Notes

For extra flavor, add a dash of hot sauce or herbs.
