A quick and delicious pasta salad combining tender chicken, fresh vegetables, and flavorful pesto for a satisfying meal or side dish.

Ingredients

Pasta and Chicken

  • 2 cups cooked pasta (rotini or penne)
  • 1 cup cooked chicken breast, shredded or diced
  • 1/2 cup pesto sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup grated parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • to taste salt and pepper
  • 1 tablespoon olive oil (optional)

Instructions 

  • Combine cooked pasta and shredded chicken in a large bowl.
  • Mix in pesto sauce until evenly coated.
  • Add cherry tomatoes, mozzarella, and basil; toss gently.
  • Sprinkle with Parmesan, season with salt and pepper.
  • Optional: drizzle with olive oil, then toss again.
  • Chill for 30 minutes before serving.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
