A hearty and cheesy baked dish combining tender chicken, crispy potatoes, and melted mozzarella for a satisfying meal.
Ingredients
Potatoes

potatoes (russet, red, or white), washed and diced into ¾ inch cubes
(no need to peel)

minced garlic

olive oil
(can be reduced to ½ tablespoon if desired)

boneless skinless chicken breasts or thighs

shredded mozzarella cheese
(freshly shredded recommended, but store-bought is fine)
Fresh parsley
for garnish (optional)
Instructions
Preheat oven to 400°F (200°C).
Toss diced potatoes with olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
While potatoes roast, cook chicken until fully cooked and shredded.
Combine roasted potatoes and shredded chicken in a baking dish. Top with shredded mozzarella cheese.
Bake for an additional 15 minutes until cheese is melted and bubbly. Garnish with parsley if desired.
Notes
For extra flavor, add herbs or spices of your choice.
