A hearty and cheesy baked dish combining tender chicken, crispy potatoes, and melted mozzarella for a satisfying meal.

Ingredients

Potatoes

  • 4 medium potatoes (russet, red, or white), washed and diced into ¾ inch cubes (no need to peel)
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil (can be reduced to ½ tablespoon if desired)
  • teaspoon salt
  • teaspoon pepper
  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 1 cup shredded mozzarella cheese (freshly shredded recommended, but store-bought is fine)
  • Fresh parsley for garnish (optional)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss diced potatoes with olive oil, garlic, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  • While potatoes roast, cook chicken until fully cooked and shredded.
  • Combine roasted potatoes and shredded chicken in a baking dish. Top with shredded mozzarella cheese.
  • Bake for an additional 15 minutes until cheese is melted and bubbly. Garnish with parsley if desired.

Notes

For extra flavor, add herbs or spices of your choice.
