A delicious baked pasta dish filled with tender chicken, spinach, and artichokes, topped with cheese and marinara sauce.

Ingredients

Pasta

  • 20 large jumbo pasta shells

Protein

  • 1 lb cooked chicken, shredded

Vegetables & Dairy

  • 1 cup chopped spinach (fresh or frozen, drained)
  • 1 cup canned artichoke hearts, chopped
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated parmesan cheese
  • 1 cup ricotta cheese
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 2 tbsp olive oil

Seasonings

  • to taste salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C). Cook shells until al dente, drain.
  • Mix shredded chicken, spinach, artichokes, ricotta, mozzarella, Parmesan, garlic, salt, and pepper.
  • Stuff shells with mixture, place in baking dish, cover with marinara.
  • Bake covered 25-30 mins, then uncover and bake 5 mins until bubbly and browned.

Notes

For extra flavor, add fresh herbs before serving.
