A delicious and healthy baked chicken dish with zucchini and melted mozzarella cheese, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)

Vegetables

  • 2 medium zucchinis (sliced into ½ inch rounds)

Oils & Seasonings

  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder

Cheese

  • 1 cup shredded mozzarella cheese

Salt and Pepper

  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C). Grease a baking dish.
  • Season chicken with salt, pepper, and half of the Italian seasoning. Arrange in dish with zucchini.
  • Drizzle with olive oil, sprinkle garlic powder and remaining Italian seasoning. Cover with mozzarella.
  • Bake for 30-35 minutes until chicken reaches 165°F and cheese is golden.

Notes

Use fresh mozzarella for best flavor. Serve hot and enjoy!
