A delicious and healthy baked chicken dish with zucchini and melted mozzarella cheese, perfect for a quick weeknight dinner.
Ingredients

boneless, skinless chicken breasts
(about 1.5 lbs)
Vegetables

zucchinis
(sliced into ½ inch rounds)

olive oil

Italian seasoning

garlic powder
Cheese

shredded mozzarella cheese

Instructions
Preheat oven to 400°F (200°C). Grease a baking dish.
Season chicken with salt, pepper, and half of the Italian seasoning. Arrange in dish with zucchini.
Drizzle with olive oil, sprinkle garlic powder and remaining Italian seasoning. Cover with mozzarella.
Bake for 30-35 minutes until chicken reaches 165°F and cheese is golden.
Notes
Use fresh mozzarella for best flavor. Serve hot and enjoy!
