15ozchickpeas(drained and rinsed)
2cupsfresh arugula

Dressing
3tablespoonsolive oil
2tablespoonslemon juice
Salt and pepper(to taste)
Instructions
Rinse quinoa under cold water for 2 minutes.
Combine quinoa and water in a saucepan. Bring to a boil, then simmer for 15 minutes. Let cool.
Chop arugula, tomatoes, cucumber, and red onion.
