This Chickpea Arugula Quinoa Salad is a vibrant and healthy dish, perfect for a light lunch or side. It combines the nutty flavor of quinoa with fresh vegetables and a zesty lemon dressing.

Ingredients

Salad Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 15 oz chickpeas (drained and rinsed)
  • 2 cups fresh arugula
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 0.25 red onion (thinly sliced)
  • 0.25 cup feta cheese (crumbled (optional))

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper (to taste)

Instructions 

  • Rinse quinoa under cold water for 2 minutes.
  • Combine quinoa and water in a saucepan. Bring to a boil, then simmer for 15 minutes. Let cool.
  • Chop arugula, tomatoes, cucumber, and red onion.
  • Combine cooked quinoa, chickpeas, arugula, tomatoes, cucumber, and red onion in a bowl.
  • Whisk together olive oil, lemon juice, salt, and pepper.
  • Pour dressing over salad and toss gently.
  • Sprinkle feta cheese over the salad (optional).
  • Serve immediately or chill for 30 minutes.

Notes

For a vegan option, omit the feta cheese. You can also add other vegetables like bell peppers or avocado for extra flavor and nutrients.
