A nutritious and easy-to-make vegan omelette using chickpea flour and vegetables, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cumin powder
  • to taste salt

Vegetables

  • 1/2 cup chopped vegetables (onion, bell pepper, spinach, etc.)
  • 2 tablespoons olive oil
  • optional fresh herbs (for garnish)

Instructions 

  • Mix chickpea flour, turmeric, cumin, and salt in a bowl.
  • Whisk in water until smooth, then stir in vegetables.
  • Heat oil in a skillet over medium heat.
  • Pour batter into skillet, cook until edges lift and bottom is golden, about 3-4 minutes, then flip and cook 2-3 minutes.
  • Repeat with remaining batter, serve hot with herbs if desired.

Notes

You can customize the vegetables and herbs for different flavors.
