Ingredients

Canned Goods

  • 1 can chickpeas, drained and rinsed
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • optional fresh parsley for garnish

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add chickpeas, cumin, paprika, salt, and pepper; sauté until crispy (~5-7 mins).
  • Create wells in chickpeas and crack eggs into each; cover and cook until whites are set (~5-7 mins).
  • Remove from heat, garnish with parsley if desired, and serve immediately.

Notes

Use fresh parsley for best flavor, and adjust salt and pepper to taste.
