A refreshing and healthy salad made with chickpeas, tomatoes, cucumbers, and a zesty dressing.
Ingredients

chickpeas, drained and rinsed

cup
cherry tomatoes, halved
1
medium
cucumber, diced
1/4

red onion, finely chopped
1/4
cup
fresh parsley, chopped

tablespoons
olive oil

tablespoon
lemon juice

teaspoon
garlic powder
salt
(to taste)

(to taste)
Instructions
In a large bowl, combine the drained chickpeas, cherry tomatoes, diced cucumber, red onion, and chopped parsley.
In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
Pour the dressing over the salad and toss gently to combine all the ingredients.
Taste and adjust seasoning if necessary, then serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
For added flavor, consider adding feta cheese or avocado.
