Ingredients
Green Goddess Dressing
1/2cupmayonnaise
1/4cupsour cream or Greek yogurt
1/4cupchopped fresh parsley
1/4cupchopped fresh chives
2tablespoonslemon juice
1tablespoonolive oil
1clovegarlic, minced
1/4teaspoonsalt
1/8teaspoonblack pepper
Salad
1headromaine lettuce, chopped
1cucumber, peeled, seeded, and chopped
2stalkscelery, chopped
1avocado, diced
1/2cupchopped green bell pepper
1/4cupcrumbled feta cheese (optional)
Instructions
Blend dressing ingredients until smooth.
Combine lettuce, cucumber, celery, avocado, and bell pepper in a bowl.
Pour dressing over salad and toss.
Top with feta cheese, if desired.
Serve immediately.
Notes
Adjust the amount of dressing to your liking. For a vegan option, use vegan mayonnaise and yogurt, and omit the feta cheese.
