Instructions
Preheat oven to 375°F (190°C).
Simmer pomegranate juice, honey, balsamic vinegar, and mustard until reduced by half, about 10-15 minutes.
Season salmon with salt and pepper. Sear skin-side down in olive oil for 3-4 minutes until crispy.
Flip salmon, pour sauce over, and bake for 10-12 minutes. Rest briefly before serving.
Notes
Use fresh pomegranate seeds for the best garnish and flavor.
