Ingredients

  • 4 fillets salmon fillets (skin-on preferred)
  • 1 cup pomegranate juice
  • 1/4 cup honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dijon mustard

  • 1 tablespoon olive oil
  • for garnish fresh pomegranate seeds

Instructions 

  • Preheat oven to 375°F (190°C).
  • Simmer pomegranate juice, honey, balsamic vinegar, and mustard until reduced by half, about 10-15 minutes.
  • Season salmon with salt and pepper. Sear skin-side down in olive oil for 3-4 minutes until crispy.
  • Flip salmon, pour sauce over, and bake for 10-12 minutes. Rest briefly before serving.

Notes

Use fresh pomegranate seeds for the best garnish and flavor.
