A refreshing cucumber salad dressed with a tangy apple cider vinegar and honey dressing.
Ingredients

large cucumbers, thinly sliced
1/2
red onion, thinly sliced
1/4
cup
apple cider vinegar

tablespoons
honey
1/4

olive oil

teaspoon
salt

teaspoon
black pepper

tablespoon
fresh dill, chopped

fresh parsley, chopped

Instructions
In a large bowl, combine the sliced cucumbers and red onion.
In a separate small bowl, whisk together the apple cider vinegar, honey, olive oil, salt, and black pepper until well combined.
Pour the dressing over the cucumber and onion mixture and toss gently to coat.
If desired, add the chopped dill and parsley, and mix again.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve chilled, and enjoy your refreshing cucumber salad!
Notes
For added flavor, let the salad sit in the refrigerator for a few hours before serving.
