Ingredients

Instructions 

  • In a large bowl, combine the sliced cucumbers and red onion.
  • In a separate small bowl, whisk together the apple cider vinegar, honey, olive oil, salt, and black pepper until well combined.
  • Pour the dressing over the cucumber and onion mixture and toss gently to coat.
  • If desired, add the chopped dill and parsley, and mix again.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve chilled, and enjoy your refreshing cucumber salad!

Notes

For added flavor, let the salad sit in the refrigerator for a few hours before serving.
