A refreshing and colorful pasta salad perfect for picnics and gatherings.

Ingredients

  • 8 ounces rotini or penne pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 cup red bell pepper (diced)
  • 1/2 cup black olives (sliced)
  • 1/2 cup red onion (finely chopped)
  • 1 cup mozzarella cheese (cubed)
  • 1/4 cup fresh parsley (chopped)
  • 1/2 cup Italian dressing
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
  • In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, black olives, red onion, mozzarella cheese, and parsley.
  • Pour the Italian dressing over the pasta salad and toss gently to combine all ingredients evenly.
  • Season with salt and pepper to taste, mixing well.
  • Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld before serving.

Notes

Feel free to add other vegetables or proteins to customize your salad.
