  • 3 lbs Yukon Gold potatoes (peeled and cut into bite-size pieces)
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 teaspoons apple cider vinegar
  • 0.25 cup sweet pickle relish
  • 4 hardboiled eggs (peeled and chopped)
  • 2 ribs celery (chopped)
  • 0.33 cup chopped green onions
  • to taste kosher salt
  • to taste fresh ground black pepper
  • Paprika (for garnish)

Instructions 

  • Boil potatoes until fork tender, then drain and cool.
  • Whisk mayonnaise, mustard, and vinegar. Add relish, eggs, celery, green onions, and potatoes. Gently fold.
  • Season with salt and pepper. Garnish with paprika.

Notes

For a tangier flavor, add a tablespoon of dill pickle juice to the dressing.
