A flavorful and creamy rice bowl featuring tender chicken and coconut-infused rice, perfect for a quick and satisfying meal.

Ingredients

Rice and liquids

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 2 cups water

Chicken and seasonings

  • 2 chicken breasts diced chicken breasts
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Seasoning and garnish

Instructions 

  • Rinse rice, then combine with coconut milk and water; bring to a boil.
  • Reduce heat, cover, and simmer for 15-20 minutes until cooked.
  • Cook diced chicken in oil with garlic and ginger until golden, then add soy sauce and lime juice.
  • Fluff rice, divide into bowls, top with chicken mixture, and garnish with cilantro and lime wedges.

Notes

Use fresh cilantro for best flavor and adjust seasoning to taste.
