Ingredients
Tortillas

black beans, drained and rinsed

corn, drained

red bell pepper, diced

onion, diced

enchilada sauce

shredded cheese (cheddar or mexican blend)

teaspoon
cumin

teaspoon
chili powder
to taste
salt and pepper

fresh cilantro for garnish
Instructions
Preheat oven to 350°F (175°C).
Sauté onion and garlic until translucent.
Add bell pepper, beans, corn, cumin, chili powder, salt, and pepper; cook 5 minutes.
Spread enchilada sauce in a baking dish. Layer tortillas, vegetable mixture, sauce, and cheese. Repeat layers.
Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes until bubbly and golden. Garnish with cilantro if desired.
