A hearty and flavorful vegetarian casserole layered with tortillas, beans, vegetables, and cheese, perfect for a comforting meal.

Ingredients

Tortillas

  • 8 pieces corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 small red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (19 oz) enchilada sauce
  • 1 cup shredded cheese (cheddar or mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper

Garnish

  • optional fresh cilantro for garnish

Instructions 

  • Preheat oven to 350°F (175°C).
  • Sauté onion and garlic until translucent.
  • Add bell pepper, beans, corn, cumin, chili powder, salt, and pepper; cook 5 minutes.
  • Spread enchilada sauce in a baking dish. Layer tortillas, vegetable mixture, sauce, and cheese. Repeat layers.
  • Cover with foil and bake 25 minutes. Remove foil and bake 10-15 minutes until bubbly and golden. Garnish with cilantro if desired.
