A delightful and colorful salad combining the sweetness of sweet potatoes and cranberries with the crunch of pecans. Perfect as a side dish or a light meal.

Ingredients

Salad Ingredients

  • 2 large sweet potatoes (peeled and cubed)
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup chopped green onions

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
  • Combine roasted sweet potatoes, cranberries, pecans, and green onions in a bowl.
  • Whisk together apple cider vinegar, maple syrup, salt, and pepper in a small bowl.
  • Pour the dressing over the salad and toss gently.
  • Serve warm or at room temperature.

Notes

Add a sprinkle of goat cheese for extra flavor!
