Ingredients

large cucumbers, diced

cherry tomatoes, halved

red onion, thinly sliced
1/4

fresh parsley, chopped

extra-virgin olive oil

Instructions
In a large bowl, combine the diced cucumbers, halved cherry tomatoes, sliced red onion, and chopped parsley.
In a separate small bowl, whisk together the olive oil, apple cider vinegar, garlic powder, salt, and pepper until well combined.
Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
