Ingredients

  • 2 large cucumbers, diced
  • 2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • salt and pepper (to taste)

Instructions 

  • In a large bowl, combine the diced cucumbers, halved cherry tomatoes, sliced red onion, and chopped parsley.
  • In a separate small bowl, whisk together the olive oil, apple cider vinegar, garlic powder, salt, and pepper until well combined.
