This creamy buffalo chicken pasta bake is a quick, high-protein dinner perfect for busy nights. It combines spicy buffalo sauce with cheesy goodness for a satisfying meal.

Ingredients

Pasta

  • 8 ounces penne pasta
  • 2 cups cooked shredded chicken
  • 1 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup greek yogurt
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Garnish

  • fresh parsley (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Cook pasta until al dente, then drain.
  • Mix shredded chicken, buffalo sauce, cream cheese, Greek yogurt, garlic powder, onion powder, salt, and pepper until combined.
  • Add cooked pasta and half the cheeses to the mixture, stirring to coat.
  • Transfer to a greased baking dish, top with remaining cheese and green onions, then bake for 25-30 minutes until bubbly and golden.
  • Garnish with parsley if desired, let cool briefly, then serve.

Notes

For extra flavor, add a dash of hot sauce or serve with celery sticks.
