A delicious and comforting casserole combining tender chicken, fresh spinach, and creamy cheeses for a satisfying meal.

Ingredients

Protein

  • 2-3 cups cooked and shredded chicken (Breasts or thighs)

Vegetables

  • 4 cups fresh spinach or frozen spinach (Thawed and drained)

Dairy

  • 8 ounces cream cheese (Softened)
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Seasonings

  • 2 cloves garlic (Minced)
  • 1 small onion (Finely chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Spices

  • Pinch of nutmeg (Optional)

Additional ingredients

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix cooked chicken, spinach, cream cheese, sour cream, mozzarella, Parmesan, garlic, onion, salt, pepper, and nutmeg (if using).
  • Transfer mixture to a baking dish and top with optional ingredients if desired.
  • Bake for 25-30 minutes until bubbly and golden.
  • Serve hot and enjoy!

Notes

For a lighter version, use reduced-fat cheese and Greek yogurt instead of sour cream.
