Ingredients

  • 2 large cucumbers (diced)
  • 2 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp lemon juice
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the diced cucumbers, halved cherry tomatoes, and sliced red onion.
  • In a separate small bowl, whisk together the Greek yogurt, mayonnaise, fresh dill, lemon juice, salt, and pepper until smooth.
  • Pour the creamy dressing over the cucumber and tomato mixture and gently toss until everything is well coated.
  • Taste and adjust seasoning if necessary, then refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For added flavor, consider using fresh herbs or a splash of vinegar.
