A refreshing and creamy salad perfect for summer gatherings.

Ingredients

  • 2 large cucumbers
  • 1 cup sour cream
  • 1 tbsp white vinegar
  • 1 tbsp sugar
  • 1 tsp garlic powder
  • 1 tsp dill weed
  • salt (to taste)
  • pepper (to taste)
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh dill (optional)

Instructions 

  • Wash and peel the cucumbers, then slice them thinly.
  • In a large mixing bowl, combine the sour cream, white vinegar, sugar, garlic powder, and dill weed.
  • Mix the dressing well until smooth and creamy.
  • Add the sliced cucumbers and chopped red onion to the bowl with the dressing.
  • Toss the cucumbers and onion gently to coat them evenly with the dressing.
  • Season with salt and pepper to taste, and add the fresh dill if using.
  • Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For a lighter version, you can substitute Greek yogurt for sour cream.
