A refreshing and creamy salad made with cucumbers, tomatoes, and a tangy yogurt dressing.

Ingredients

  • 2 large cucumbers, peeled and diced
  • 2 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • salt and pepper (to taste)
  • Fresh dill sprigs for garnish (optional)

Instructions 

  • In a large bowl, combine the diced cucumbers, halved cherry tomatoes, and chopped red onion.
  • In a separate bowl, mix together the Greek yogurt, mayonnaise, apple cider vinegar, garlic powder, dried dill, salt, and pepper until smooth and well combined.
  • Pour the creamy dressing over the cucumber and tomato mixture, and gently toss to coat all the vegetables evenly.
  • Taste and adjust seasoning with additional salt and pepper if needed.
  • Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  • Serve chilled, garnished with fresh dill sprigs if desired.

Notes

For a lighter version, you can reduce the amount of mayonnaise or use a yogurt-based dressing.
