A refreshing and creamy salad made with cucumbers, tomatoes, and a tangy yogurt dressing.
Ingredients
2large cucumbers, peeled and diced
2cupcherry tomatoes, halved
1/2red onion, finely chopped
1cupplain Greek yogurt
2tbspmayonnaise
1tbspapple cider vinegar
1tspgarlic powder
1tspdried dill
salt and pepper(to taste)
Fresh dill sprigs for garnish(optional)
Instructions
In a large bowl, combine the diced cucumbers, halved cherry tomatoes, and chopped red onion.
In a separate bowl, mix together the Greek yogurt, mayonnaise, apple cider vinegar, garlic powder, dried dill, salt, and pepper until smooth and well combined.
Pour the creamy dressing over the cucumber and tomato mixture, and gently toss to coat all the vegetables evenly.
Taste and adjust seasoning with additional salt and pepper if needed.
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Serve chilled, garnished with fresh dill sprigs if desired.
Notes
For a lighter version, you can reduce the amount of mayonnaise or use a yogurt-based dressing.
