Instructions
In a large mixing bowl, combine the diced cucumbers, halved cherry tomatoes, and finely chopped red onion.
In a separate bowl, whisk together the sour cream, mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until smooth.
Pour the creamy dressing over the vegetable mixture and toss gently to coat evenly.
Taste and adjust seasoning if needed, adding more salt and pepper as desired.
Transfer the salad to a serving dish and garnish with chopped fresh parsley.
