This creamy garlic chicken bowl with broccoli and rice is an easy, flavorful dinner perfect for busy weeknights.

Ingredients

Protein

  • 1 lb chicken breast, diced

Vegetables

  • 2 cups broccoli florets

Carbohydrate

  • 1 cup rice (white or brown)

Flavor & Seasoning

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon paprika (optional)

For serving

  • grated parmesan cheese (optional) grated parmesan cheese (for topping)

Instructions 

  • Cook rice according to package instructions.
  • Sauté diced chicken in olive oil until golden and cooked through, about 5-7 minutes.
  • Add garlic and cook for 1 minute, then pour in chicken broth and heavy cream. Simmer until sauce thickens, 3-5 minutes.
  • Add broccoli, cover, and cook for 4-5 minutes until tender. Serve over rice and top with Parmesan if desired.

Notes

Feel free to add more garlic or cheese for extra flavor.
